I really fancied getting some baking and creativity out of my system yesterday, so I tried to make a bread that was basically free from .. well mostly everything! It’s free from soy, dairy, yeast, eggs, gluten and wheat. Only thing it isn’t free from is nuts and seeds.Â
Ingredients needed:
300g almond flour
100g coconut flourÂ
3 heaped tsp psyllium husksÂ
85g flaxseeds or chia seeds (or half of both!)
2 tbsp Mixed herbs
1tbsp Garlic powderÂ
Salt and pepperÂ
2 cups of cold water
*Tip: Adding some crushed seeds/nuts to the mixture would give it a nice nutty texture!
Time from prep to baked: 1hr30min -2hrs.
Servings: 1 loaf or as I didn’t have a loaf tin i used muffin tins and a cake tin.Â
Step 1:
Mix all dry ingredients in a bowl.Â
Step 2:
Add cold water to dry mix gradually and form a very firm dough.Â
(You want it quite dry, no sogginess otherwise it’ll stay dense and soggy inside when baked. If you need to add more nut flour or husks, that’s fine to make it firm.)
Step 3:
Let sit for an hour with cling film covering it.
Step 4:
Preheat oven on 180c.
Step 5:
Grease your tin with coconut oil.
Step 6:
After 1 hour, Use a spoon to push down the mixture into the tins. I topped mine with sunflower seeds and pine nuts and pushed them down with the spoon and sprinkled with salt.Â
Step 7:
Bake for 30min-1 hour or until the bread is golden brown and if you stick a knife in the middle it comes out clean.Â
